We spoke with celebrated, award winning Central Queensland cake designer Theresa Fletcher of TMF Cake Designs, whose handcrafted creations have become a signature feature at many elegant weddings across the Capricorn Coast and Central Highlands.

With more than 16 years of experience, Theresa approaches every cake with a thoughtful balance of design, flavour and storytelling, ensuring each creation feels seamlessly connected to the celebration it’s made for.

How do you approach designing a wedding cake that feels personal to each couple?

At TMF, the process always begins with listening. Every couple has their own story, style and vision, so I take the time to understand what matters most to them.

Sometimes that inspiration comes from their personal story, the venue, the colour palette, or the atmosphere they want to create for their guests. From there, I design a cake that feels naturally connected to the celebration — something that looks beautiful within the space but is also equally delicious and uniquely theirs.

What details do you usually ask couples to consider before beginning the design process?

I encourage couples to think about a few key elements first:

• Their colour palette and florals

• Guest numbers and how they plan to serve the cake (with coffee or as the main dessert)

• Whether they prefer something modern, textural, or timeless

• Flavour preferences

• Whether the event is indoors or outdoors

Living in Central Queensland, temperature can also play a role. Air-conditioning is often a must throughout the year, and how the cake will be displayed can influence both the design and flavour choices.

Considering these details early helps guide the design so the cake feels like a natural extension of the day rather than an afterthought.

How important is the venue in shaping the look and style of a wedding cake?

The venue plays a very important role. The architecture, surroundings and styling of a space can influence the scale, colour palette and finish of a cake.

For example, a heritage estate may suit something romantic or textural, while a contemporary venue often lends itself to a cleaner, more minimal design. I always aim for the cake to feel harmonious with the environment it sits in.

Are there particular cake styles or finishes that work especially well for outdoor or estate weddings like Ambrym Estate?

For estate-style venues such as Ambrym Estate, I find minimalistic and refined designs work beautifully. Clean finishes, soft textures and delicate sugar florals with organic movement complement the surroundings well.

Long table cakes and dessert-style wedding cakes are also becoming popular choices, as they create a visually striking feature while encouraging guests to interact and enjoy the dessert experience together.

What flavour combinations are couples gravitating towards right now?

Tiramisu is definitely the flavour our 2026 brides are asking for the most right now.

At the same time, many couples still gravitate towards the classic TMF favourites that have been popular for over 16 years — chocolate, vanilla and caramel in both butter cakes and mud cakes.

Some other combinations couples love include vanilla bean with raspberry or strawberry, and chocolate paired with hazelnut, caramel or peanut.

Do you see couples leaning more towards classic designs, contemporary styles or something in between?

For 2026 weddings, couples seem to be embracing a blend of both. Vintage-inspired textured cakes and sugar florals are very popular, while many couples are also adding unique personal details.

I’ve seen beautiful touches such as handcrafted sugar figurines of their pets incorporated into the design. So overall, I’d say couples are leaning towards something in between — timeless but personalised, with details that make the cake truly their own.

How far in advance should couples book their wedding cake, and why?

Ideally, couples should book their wedding cake around 12 months in advance, especially if their date falls during peak wedding season.

At TMF Cake Designs, the focus is on creating a relaxed and enjoyable cake journey for each couple. Booking early allows plenty of time to thoughtfully discuss design ideas, flavours and styling so the cake feels perfectly aligned with everything else they have chosen for their special day.

Having that time also removes the pressure of rushed decisions. From the initial enquiry through to delivery, the entire process can feel calm, intentional and exciting for both the couple and myself.

What are some common misconceptions couples have when it comes to wedding cakes?

One of the most common things I hear is that the cake is “just for decoration” and that no one really eats it.

In my experience, that couldn’t be further from the truth. When the cake tastes as good as it looks, guests absolutely look forward to it.

A well-designed wedding cake is not only a centrepiece but also a handcrafted dessert made from quality ingredients and often served to a large number of guests. The design, preparation time and detail involved can be significant, which is why each cake is carefully planned and created.

And yes — everyone eats a TMF cake.

How do you balance visual impact with flavour and texture?

Both are equally important. A cake should look beautiful, but it also needs to taste exceptional.

There’s nothing more disappointing than seeing a breathtaking cake and then finding the flavour doesn’t live up to the visual experience. That’s often why people assume guests don’t eat the cake.

At TMF, I focus on balanced flavour combinations, textures and fillings that complement my butter cakes and mud cakes. The goal is for the cake to be just as memorable when guests taste it as when they first see it.

What role do seasonal ingredients play in your cake designs?

Seasonal ingredients are wonderful because they offer the best flavour.

When fruits are in season, I love incorporating them into flavour profiles that reflect the time of year. It enhances the taste of the cake and subtly connects it to the season in which the couple is celebrating.

When fresh ingredients aren’t available, I also work with high-quality frozen or freeze-dried fruits to maintain flavour and consistency.

Can you customise cakes to suit dietary requirements without compromising on design or taste?

In many cases, yes.

Most TMF cake flavours can be adapted to suit gluten-free dietary requirements by ingredient without compromising flavour or design. Many of the ingredients I use are naturally gluten-free, which makes this a straightforward option for many couples.

However, I do work in a kitchen that handles gluten, dairy, nuts, eggs and soy, so I’m unable to cater for severe allergens.

For dairy-free requests, the flavour can still be beautiful, but dairy-free icings tend to be much softer in structure. Because of this, I often recommend a smaller cake or cupcakes as the most suitable option for dairy-free guests.

How do you collaborate with other wedding suppliers to ensure a cohesive look?

Collaboration with other suppliers is an important part of creating a cohesive wedding day.

I’ve had the opportunity to work with many wonderful vendors across the Central Highlands and Capricorn Coast regions. I often liaise with florists and stylists, particularly when a cake includes sugar florals, to ensure the colours and floral selections complement the overall styling of the event.

These small details help the cake integrate seamlessly into the entire design of the day.

What advice would you give couples who feel overwhelmed by choice when it comes to their cake?

The best advice I give couples is to keep inspiration simple. Rather than sending dozens of images, I suggest choosing just three cake designs they love and explaining what they like about each one.

That gives me a clear sense of their style without creating unnecessary overwhelm.

Are there any emerging cake trends you’re loving for the upcoming wedding season?

Some exciting trends emerging for 2026 include large tiramisu slabs, textural wafer-paper cakes with statement bows, and interactive table-runner style cakes designed to be shared.

I’m also seeing beautiful textured finishes inspired by Venetian plaster and stone, which add a sophisticated and artistic element to cake design.

What makes a wedding cake truly memorable in your eyes?

For me, a memorable wedding cake feels effortless and meaningful.

It reflects the couple, complements the setting and creates a moment of joy when it’s shared with guests. When the design, flavour and atmosphere all come together beautifully, the cake becomes part of the story of the day.
